Among the first producers of whitew wine there are ancient Greeks, who during the vinification process used to separate the skins from the pulp of grapes. In Italy, since the age of Roma Empire some regions, especially in the North of the peninsula, specialised in high quality white wine productions.
White wines are clear, light yeallow in colour with golden, straw yellow, amber or green shades. They often smell of fruits and flowers. White wine usually has a lower contant in alcohol than red wine; it should be served fresh (between 8° and 14°C.) and it should generally be drunk within 2-3 years after the harvest.
